For someone’s who has always had to watch my weight, sticking to a healthy diet was a challenge. I’ve always had a large appetite and my lifestyle didn’t help me in my drive to eat better. My lack of creative ideas for healthier meals encouraged my cravings because I was restricting myself to salads, chicken and rice etc, this became boring and repetitive and was never going to be sustainable. By following different bloggers and through some trial and error I have a much more varied and exciting range of things I make and actually enjoy. This need to improve my lifestyle and ‘diet’ has meant that I’ve become much more interested in food and nutrition.
For my next few blogs ill be sharing some of the ideas of meals and snacks that are ‘guilt free’ and maybe something you can look forward to rather than something seen as a burden that you’d easily give up on.

Baked Avocado Eggs - This is so easy to make and is probably one of my favourites (could make a smaller portion)

·         Preheat oven to 200’C
·         Half 2 large avocados scooping out majority to make hollow room, place the 4 halves them on a baking tray and then crack one egg (4 in total) into each avocado half seasoning with salt and pepper
·         Then top with the toppings of your preference (bacon bits, diced chorizo, cut up cherry tomatoes, grated cheese), I personally like to make each individual one different or even have a combination of a couple toppings.
·         Add additional herbs/spices of your choice
·         Bake in the oven for 15 minutes for a runny yolk which I prefer or longer if you choose.
