Sun Dried Tomato and Prawn linguine


Sun - Dried Tomato Prawn linguine – 2 servings
This is a really quick and easy meal to make. The prawns can be substituted for another type of meat or even without any meat if you chose, its tasty enough on its own. Also, if your trying to keep your carb count reduced, then instead of using normal spaghetti substitute this with courgette spaghetti, usually kept near the stir fry sections in supermarket used as an alternative to pasta.
Ingredients:
Wholegrain spaghetti or courgette
300g King prawns (ready cooked)
100g Sundried tomato
Some diced chorizo
1 Tin of chopped tomatoes
Chilli flakes
Parsley
Oregano
1 onion diced
2 cloves garlic crushed
Parmesan


Steps:
1.       Chop up onion and sun dried tomato, crush garlic and dice chorizo.
2.       If you choose to make it with wholegrain pasta put in the pot then bring to boil with salt.
3.       Using the oil from the jar of sun dried tomatoes, heat up frying pan and add the diced onion, chorizo, crushed garlic, chilli flakes and sun dried tomatoes and fry for around 5 minutes.
4.       Then add in your king prawns or other meat and fry for a further couple of minutes.
5.       Add your tin of chopped tomatoes, parsley and oregano mix well and then simmer for 10 minutes.
6.       Drain the spaghetti adding salt and pepper mixing well through the sauce and other ingredients. However, if you’ve chosen to use courgette, fry it in a separate pan for around 4 minutes and then mix with the sauce again adding your salt and pepper.
7.       Divide it into the separate servings then add Parmesan and parsley.
